This salad isn't just incredibly vibrant and fresh - it's also rich in essential vitamins and minerals, high in fiber, and wonderfully hydrating thanks to the star ingredient - cucumbers.

  • 2 cucumbers (large)
  • 1/4 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 1/4 cup chopped fresh dill
  • salt & pepper (to taste)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  1. Peel the cucumbers if desired, then cut them in half lengthwise. Scoop out the seeds with a spoon and slice the cucumbers thinly.

  2. In a large bowl, combine the apple cider vinegar, olive oil, salt, pepper, red pepper flakes (if using), and chopped dill. Mix well to combine.

  3. Add the sliced cucumbers to the bowl and toss to combine, making sure all the cucumber slices are coated with the dressing.
